Good King Henry - Chenopodium bonus-henricus. An ancient and perennial vegetable. Force for asparagus like shoots early in the spring.
Young leaves may be cooked as spinach and flower buds sauteed in butter. Also called Mercury or Lincolnshire spinach. Height 30cm
When to Sow: Sow outside in spring in shallow drills. Cover lightly with soil and make sure soil doesn't dry out. Seeds may also be sown in late summer.
Where to Sow: GROWIn full sun in well cultivated and rich soil that is well drained. For the best results, grow in well composted ground and do not allow to dry out in summer.
