Spelt is the ancestor of wheat, a cereal of the past used as a green fertiliser. One of its features is its envelope which is very hard, thus mould cannot reach the grain. This skin is very rich in silicium. Thanks to its deep roots, it can grow in very poor, poorly fertilized and very dry soil. Spelt grows well in soil that is poor in nutrients. This very vigorous cereal requires no fertiliser or disease treatment. A fairly low yield, but its main asset is to survive in poor soil where other species do not grow. Very well suited to cold and humid soil, poorly drained and damp areas. Its cycle is 11 months, sowing is done in late summer and autumn. Harvesting is done at the same time as winter wheat when the straw is yellow and the grain breaks when broken up.
